I really love these boards for cutting, serving, etc. The largest one is a great size for serious cooks. One downside though: the largest board tends to warp after you hand wash and air dry it. Always concave towards the side that's wet, like wood. When it warps enough, I can spin it in circles on my smooth countertops. I end up turning it over for cutting stability. I've never experienced this with my older Epicurean cutting boards, which had a waxier surface. I'm wondering if I should have sealed the newer boards with mineral oil or wax. If I wash the board evenly on both sides, it tends to flatten out over time. But it's a never ending process to keep both sides evenly washing. Not something I really want to think about.
